~1 1/2 Cups All-Purpose Flour
~2 Tsp. Baking Powder
~2 Tbs. White Granulated Sugar
~2 Large Eggs
~1 1/4 Cups Milk
~3 Tbs. Melted Butter
~1 Tsp. French Vanilla Extract

~Whisk together Flour, Baking Powder and Sugar, incorporating fully.

~Separate Eggs. Beat whites into stiff piques.

~In a separate sigh, whisk together Milk, Egg Yolks, Melted Butter and French Vanilla Extract.

~Combine wet and dry mixtures and whisk together JUST until fully incorporated. DO NOT OVERBEAT.

~Fold in egg whites in two additions, fully mixing in but being careful not to break the foam.

~Rest batter for 15-20 minutes, covering the batter dish with a dry dish cloth.

~Cook in a greased, medium-low heat skillet until golden brown on both sides.
