~*Peanut Butter Cookies*~
~*Ingredients*~
~1/2 Cup (1 Stick) Unsalted, Softened Butter
~1/4 Cup Vegetable Shortening
~1/4 Cup Creamy Peanut Butter
~1 Cup Confectioner's Sugar
~1 Egg Yolk
~1 Tsp. French Vanilla Extract
~1 3/4 Cups All Purpose Flour
~*Preparation*~
~Preheat oven to 350F (170C).
~Cream together Butter, Shortening and Peanut Butter.
~Gradually blend in Confectioner's Sugar until smooth.
~Beat in Egg Yolk and Vanilla.
~Blend in Flour and mix well.
~Refrigerate dough for 1 hour.
~Roll dough into 1-inch balls and press gently to a greased cookie sheet.
~Bake for 15-17 minutes; edges should be slightly golden brown.
~Cool on a wire rack. Serve.
